Known for his technical curiosity and wholehearted passion, forager-turned-farmer Will Nikkel sees farming as both grit and grace: “It is an act of trust, magic, and faith to ever believe a seed will become a plant capable of helping feed us.” Will has been foraging for the Emmer & Rye Hospitatlity group since they opened, and Trosi Farms was born in 2020 when he was offered the chance to cultivate some of the land he was foraging.
What started as a pandemic project quickly became an integral part of the Michelin award winning group’s ecosystem – deepening their already strong commitment to regenerative agriculture in Texas, rooted in soil health and ancient ecology. In addition to growing for Emmer & Rye restaurants, Trosi’s produce is also available for retail at Pullman Market in San Antonio and Radius Butcher in Austin.
