Founded in 2016 and based on Four E Dairy Farm in Mouton TX, Lira Rossa is the only authentic Italian cheesemaker in Texas. They use local milk and traditional methods to make a rotating lineup of Italian-style cheeses that shift with the seasons. Their standout is Latteria — a raw-milk cheese aged anywhere from two to twelve months that’s become their signature.
