About Barton Springs Mill
Barton Springs Mill is leading a Texas grain renaissance, thanks to the vision of founder and miller James Brown. A former professional musician turned bread baker, James was inspired to bring long-forgotten grains back to Central Texas.
Since 2017, Barton Springs Mill has partnered with small family farmers to grow and stone-mill exceptional wheat, rye, and heritage grains. Early partners like Henry Martens, Ralph Hoelscher, and Aaron Vogler took a leap of faith before the mill even existed; today the network includes Bob Baker, Kelton Coleman, Kameron Koepp, the Jones Family, and Leo & Zach Thrasher. Together, they’re building a sustainable future for local grains.
Stone-ground flour, wheat berries, and baking supplies are available through the Barton Springs Mill online store and a growing number of retailers. Barton Springs Mill also boasts an on-site education center where you can learn to bake sourdough bread, pastries, and more from Austin’s best bakers using their collection of organic stone-ground flours.
