Laura Sawicki is the Culinary Director at Oseyo, the East Austin Korean-American restaurant co-founded by Lynn Miller & Mike Diaz. A celebrated pastry chef (formerly of Launderette), she rewrote Oseyo’s dessert script with bold treats like misugaru-panna cotta, soybean-paste fudgesicles, and milk-tea tiramisu inspired by local and Korean flavors.
She’s also elevated the savory menu—think kimchi-posole, gochujang-grilled steak, and oysters topped with kimchi—bridging Korean and Mexican influences in a way that’s creative and rooted in the Texas community. Laura brings both artistry and strategy to the table, reshaping East Austin dining with unexpected flavor mashups that feel effortlessly playful and ridiculously delicious.
