Born and raised in Austin, Ian Thurwachter co-founded Intero in 2018 with and his partner, Krystal Craig, bringing a “whole-animal” and zero-waste philosophy to Italian cooking.
Self-taught in butchery, Ian sources exclusively from Texas farms and crafts seasonal menus that reinvent how we think about Italian fare—turning stems, scraps, and whole animals into dishes that surprise and delight. At Intero, every reclaimed piece of wood in the restaurant was built by Ian himself—continuing his family’s woodworking legacy and grounding the space in care, craftsmanship, and community.
